SWEET POTATO SOUP- IN LESS THAN 15 MINUTES
Ingredients
1 medium sweet potato – grated
1 medium onion-sliced thinly
Fresh thyme -1 twig
½ to 1 teaspoon chili pepper – according to taste
1 chicken stock cube
½ teaspoon Italian mixed herbs
½ teaspoon black pepper
200 to 300gms of chopped tin tomatoes
2 tablespoon of oil
Salt to taste
Method
Peel and grate the sweet potato
Put a sauce pan on fire- medium heat and add the oil
Once oil is hot, add the sliced onions and saute for 1-2 minutes
Add the thyme, Italian herbs, black pepper. Let sauté for 1 minute.
Add the stock cube, chopped tomato and chilli. Bring to boil and let simmer for 2minutes
Add the sweet potato and 150mls of hot water– mix well and let simmer for 5 minutes
Once sweet potato is soft and cooked – remove pan from heat , blend in a blender or use the hand stick blender to make a smooth pasty sauce
Turn the blended paste back to saucepan. Add hot water and salt if necessary- simmer for 1-2 minutes
Serve garnish with parsley and cream
