RECIPE: My Signature Salad

Ingredients:
4 free range eggs and set aside
Thinly sliced medium sized yellow onion
2 medium sized peeled and grated carrots
1/4 of medium sized white cabbage thinly sliced
1/4 of medium sized red cabbage thinly sliced
1/3 medium sized Ice berg lettuce thinly sliced
1/2 a cup each of red and green seedless grapes
Juice of 2 fresh limes
2 Teaspoons of sea salt
20 or more halves of Roma cherry tomatoes
10 each of black and green pitted olives
Danish blue creamy cheese for garnish
Method
Boil the eggs ( hard boiled) Peel , cut each into 4 places and set aside
In large bowl add the sliced onions, grated carrots, sliced green and red cabbage, lettuce, grapes, lime juice, salt, the cherry tomatoes.
Mix all together
Then add the pitted olives and mix together.
Serve each person garnishing with 4 portions sliced cooked eggs , and cuts f the danish blue creamy cheese
Can be served along with Jollof Rice, or Grilled chicken
