RECIPE: African Grilled Chicken

Serves: 3-6
Ingredients:
6 medium chicken thighs
1medium sized yellow onions chopped
2 teaspoons of Italian mixed herbs
2 teaspoons of crushed fresh ginger
3 cloves of garlic minced
2 tablespoons of freshly chopped mint
I teaspoon of chopped fresh bonnet- adjust to taste
2 teaspoons of chopped fresh thyme
1 teaspoon of ground black pepper
1 chicken stock cube dissolved
2 tablespoons of organic coconut oil
1 and 1/2 teaspoon of seat salt
Method
Slash each of the 6 chicken thigh in three to five places and set aside
In a bowl add the chopped medium sized yellow onion, and all other ingredients, mix together and set aside.
Marinate each thigh with the mixture -filling the slits as well
Mix all together and cover with a cling film
Let rest for 30-60 mins or even overnight in the fridge (can be cooked immediately after marinating if in a hurry. You will still get great taste)
Arrange the marinated thighs on the grilling rack
Grill on 200 Celsius or gas mark 6 for about 45 minutes ( adjust times to your oven settings). Turn sides every 10-15 minutes until cooked and brown
Take out and set aside
For Roll in Sauce
Put a pan on fire -medium heat
Add 2-3 tablespoons of the juicy oil from the grilled chicken
Add half a medium sized sliced onion and let brown for 1-2 minutes
Add 1 chicken stock cube and let it melt
Add left over marinate and let cook for 2 minutes
Add 1/2 teaspoon of Italian mixed herbs
Add 6-8 slices of large beefy red vine tomatoes
Simmer for 2 minutes
Add 1/2 teaspoon of chopped scotch bonnet- optional
Add the grilled chicken pieces
Roll and cover the chicken in the sauce
Simmer for about 2 minutes
Serve on a bed of salad with Jollof Rice or side of choice
