Empty contents of bag into a bowl. Gradually add 250mls of warm water (NOT HOT. the water temp should be 32-34 degrees Celsius -) while mixing. It may not be necessary to add all the water. Mix with a whisk or hand mixer on low speed until lump free. If too stiff add water in increments of 5mls (maximum 15mls). Batter should not be too loose. It should be just about falling off the back of a spoon. (See video in www. Africanpot.com.) Cover bowl and keep in a warm place for 20 mins or longer ( but not more than 45minutes) if desired. Mix together again and it is ready. Heat up about 3-5cm or more of vegetable oil to medium hot in a deep pan. (For deep fryer set temperature to 160-170 degrees Celsius). Test oil by dropping a very small batter into the oil. If batter sizzles and rises from the bottom almost immediately, the oil is ready. Scoop up some batter using a teaspoon or tablespoon according to size desired and gently lower the batter into the hot oil. Continue with the rest of the batter but avoid overcrowding. Fry until golden brown (about 4mins). Flip over at intervals of 1 & 1/2 minutes on each side. Remove with a slotted spoon and serve on its own; drizzled with sugar or with kosayi dip.

Sweet Puff Puff
Ingredients:
- 8 Fried Puff- Puff balls
- 1 teaspoon each of crushed roasted peanuts
- Almonds
- Cashew nuts or nuts of choice
- 2 teaspoons of shredded coconut
- 150mls Sugar Syrup
Method
In a bowl add the sugar syrup, then add the crushed nuts and shredded coconut. Mix well. Now add the fried puff puff and roll them in making sure each ball is well rolled in the syrup and nuts. Serve with your choice of drink.
