Recipe Instructions:
Empty contents of bag into a bowl. Add 70gms of softened butter, 2 small eggs and mix together with a wooden spoon.
Gradually add 150mls of milk while mixing. It may not be necessary to add all the milk. Mix gently -not vigorously until lump free. If too stiff add milk in increments of 5mls (maximum 15mls).
Batter should not be too loose. (See video in www. Africanpot.com.)
Fold in 300grams of drained sweet corn. Let stand for five minutes.
Mix together again and it is ready.
Heat up about 3-5cm or more of vegetable oil to medium hot in a deep pan. (For deep fryer set temperature to 160-170 degrees Celsius).
Test oil by dropping a very small batter into the oil. If batter sizzles and rises from the bottom almost immediately, the oil is ready.
Scoop up some batter using a teaspoon and gently lower the batter into the hot oil. Continue with the rest of the batter but avoid overcrowding.
Fry until golden brown (about 4- 6mins).
Flip over at intervals of 1 & 1/2 minutes on each side. Remove with a slotted spoon and serve on its own; or with kosayi dip (Visit www.Africanpot.com on how to make kosayi dip or purchase one)
** Whole bag should yield about 35+ medium sized balls. It will give 8 servings of 4 pieces per person. If using half the bag, adjust other ingredients accordingly.

Sweet Savoury Corn Fritters
Ingredients:
- 250grams of AfricanPot Corn fritter Mix
- 1 Large Clove Minced garlic
- 2 Tablespoon diced green pepper
- 2 Tablespoon diced red sweet peppers
- 1 Tablespoon of chopped fresh basil
- 2 green onion chopped
- 1 small whole egg
- 40grams of softened butter
- 2 teaspoons of diced scotch bonnet pepper (adjust to taste)
- 1 tablespoon of paprika
- 400grams of drained sweet corn (fresh sweet corn preferably)
- 100mls of milk
Method
- In a large bowl add the Africanpot corn fritter mix
- Add all the ingredients except the milk and sweet corn.
- Mix all together with a wooden spoon.
- Gradually add the milk while mixing gently into a thick consistency
- Fold in the sweet corn, mix and let stand for 5 minutes.
- Mix together again and it is ready.
- Heat up about 3-5cm or more of vegetable oil to medium hot in a deep pan. (For deep fryer set temperature to 160-170 degrees Celsius).
